  1. Heat oven to 160°C. Line a 9 x 5-inch loaf pan parchment paper. Soak oat in the milk for 5-10 minutes.
  2. In a separate bowl, combine the flour, sugar, baking soda, baking powder, salt and cinnamon.
  3. To the oats and milk mixture, add the mashed bananas, eggs whites and vegetable oil. Mix until completely combined. I chose to use a whisk and not electric mixer.
  4. Add the dry ingredients to the wet ingredients.
  5. Pour batter into loaf pan and sprinkle rolled.
  6. Oats lightly over the batter. Bake for 60 - 80 minutes; or until a toothpick inserted comes out clean.
  7. Cool in pan on wire rack 10 minutes. Remove from pan and let cool completely..
